Is it most important that you do not lie.
An M1 visa is a non immigrant visa solely for the purpose of training at a specific institution (Flight School). That Flight School -'own' you for the duration of your stay as they are sponsoring your presence in the US.
You are not permitted to work in the US.
On completion of the training you must leave the US as you are then out of status and will be kicked out when caught.
If you are contemplating a career that would then bring you back to the US at some point - the last thing you want is to be on record as having violated your stay as that will negatively impact your ability to get a future visa.

Other questions which can be asked can include such things as have you ever been arrested etc. Note - arrested - not charged... Even an arrest followed by being 'de- arrested' can and will result in no visa being granted.

Generally the interview is a formality.

You say all the rest is done..... You still need to get TSA approval and that starts after the Visa is granted.
You say your Visa interview is in the first week of the New Year - you might be cutting it a bit fine.
Have you already paid some $$ to the Flight School already?
