Display ENG page on ECAM, EICAS or whatever.
Monitor Nacelle temperature (I don't think monitoring EGT will have any use).
Have the MEL checked. MEL only applies on ground, but:
In case of No-GO, check if it can be repaired at destination. Divert if it is a no-go and it can't be repaired or you will get stuck. I you are heading to home base, it can be fixed there, so continue.
If you are twin and in ETOPS operation, probably you cannot get into ETOPs airspace. But I'm not sure.
You are still able to detect engine fire with nacelle temperature and you are still able to secure the engine if it happens.
