I think that the first answer is a little bit simple.

1. You only need an ASIC to be airside at a security controlled airport. So, if you pick a non security controlled airport, you don't need it at all (eg Tyabb, Lilydae, Coldstream, etc in Victoria).
2. You can probably do a reasonable amount of your training in a SIM. Especially if its blowing the rust off and its procedures you need to practice. Most IFR training schools have a certified SIM. SIMS are not airside, so you don't need an ASIC.
3. You don't need an ASIC to fly the aircraft, only be outside the aircraft on the airport tarmac. For this you can be accompanied by someone with an ASIC, eg Instructor, pilot mate, airport security guard, etc. So, theoretically, you can be escorted to the aircraft, do you flight then wait in the aircraft to be escorted out again.

Either way, you shouldn't have too much trouble in the short term. Remember that ASIC's can take a while to come through the system and I can imagine that Christmas may slow down the process. I'd be applying ASAP.
