I have never worked for EVA AIR but I know a few guys who have used them as a stepping stone. A couple of years ago they gave people with only prop time (D8/Metro) a go and therefore the training was pretty long apparently (loooots of sims) - but once you are on the line you can do some good hours.
If you get on the MD11F Anchorage will be your second home so therefore the A330 is the way to go if you have a choice.
All but one mate left EVA for greener pastures (isn't EVA all green?) since the pay is not that great though...
