If the aircraft, any aircraft was flying fine at 2.5 degrees nose up and cruise power why wouldn't you leave it there if the autopilot disconnects? You are 35,000 ft over the ocean so safety of flight is not an issue. Pulling up into a stall is not trained by any airline. Nobody I have ever flown with would have done that.
