(C206) Questions regarding Vy and EGT

I fly a old bird for parachute ops, a 1965 Cessna P206A.

In the flight manual it states the Best Rate of climb is achieved with full throttle and RPM on the takeoff roll (not reduced climb power) and 87knots at sea level and 79knots at 10,000.(This was converted from MPH )

It does not state what weight but I'm going to assume its at MCTOW? Should I be climbing at a lower airspeed if we arnt going up with a full load?

Also the other day I tried the cruise-climb stated in the manual after takeoff, EGT at 1400 before reduction in power and rpm (26"@2600rpm). Manifold back to 24.5inches, RPM back to 2500, Mixture was still fully rich, but I actually saw a increase in EGT to around 1440. Why is that? Should it not decrease?
