The military single seat fighter pilots get lots of training in air combat manuevering -- and get lots of experience getting the airplane back in control from muffed maneuvers. A few have to punch out.
The bean counters will not accept training regimes where trainees throw around heavies the same way gums has done in his fighters. Preventing structural failures is a pretty good reason
Plus retrofitting bang seats would be almost as expensive as a structural failure.
