"Western" employer with a western-style contract is a good idea as contracts can get broken/amended so you ned to be able to enforce it in a Western court.
Contracts DO get broken and amended. Even if you have a western-style contract, you can be "Saudised" tomorrow by some totally unqualified and inept Saudi! Furthermore you'll find no support in a western court. UK residents note that action due to racial prejudice can't be taken if your contract is for employment wholly outside the UK. There are also maximum salary limits that apply for admission to an industrial court in some countries.
Have a look in the "Military" section and search for stuff on KSA. If you like the idea of living on Mars with Martians then KSA is the place for you.
