une vitesse de fou" is crystal clear. It always means, related to speed, "extremely high". A more correct grammaticale expression would be "
une vitesse folle", exact same meaning, but here, "fou" is related to somebody: it is a metaphore meaning that only a crazy man (le fou) would go that fast.
