Yes, they are situations that, as a SCCM, you could come across any day, like problem with a passengers meal or in flight entertainment and also a situation involving giving feedback to another crew member. Obviously they are looking to find out how you deal with and solve problems on board the aircraft. As well as dealing with the scenarios that they set you, you will need examples of actual situations and how you personally dealt with them for your 1;2 interview with the selectors.

Anyone can apply as long as you have the right to live and work in the EU and can speak good English. You would however need to live in the UK as commuting to France on the new Mixed Fleet roster would be very hard.
