It was said tongue in cheek, tbh. Although it would be great to see, I don't think now is the time. We would be lucky to see a 757 service to Majorca these days, let alone NY or Boston!
That said I dont think the 757 has been seen that often in Cork? Much more 737/A320 with a few A321 thrown in, IIRC.
