Can anyone tell me what they define as recent experience? Is it during the last year, last 5 years?
EXEZY, since ETOPS posted this a.m., BA have clarified on the website what recency means:

Requirements


You will need:
  • A current type rating on either the Airbus A320 series or Boeing 737/757/767, with an ATPL(F) and a minimum of 500 hrs recent experience on type.
  • Please ensure you have these hours now, at the point of application.
  • for your information recency is:- flown on one of the above type(s) within the last 12months
So, you must have the 500 hours "at the point of application" (which could be done as late as the end of Jan 2011), and recency on an appropriate type "within the last 12 months". I don't think there is much room for doubt there.

As others have mentioned, the sooner your app is in, the sooner you are likely a shot at the recruiting process, and subsequent employment. Those who need a couple more months to get the 500 hours should really not apply until they actually have those hours logged. Someone will look over your log books - if your found to be fiddling data at that stage, what chances do you think you would have of BA taking you on?

Does anyone have an idea what the group exercises might entail?
