Two places you can look for this:

Which is the Cathay annual report for 2001. It shows that 6446 out of 7552 flight crew (pilots & cabin crew) had "total remuneration" less than 1M HKD (about US$125K)in 2001. It then shows a breakdown of the top 1006 (which I estimate roughly to be all the FOs and upwards) by bands, with the top two earning in the range HKD5.0-5.5M HKD (=USD625-680K). There appears to be a small increase in the average between 2000 & 2001.

Alternatively, the Dragonair Pilots Association site here has some comparison of CX and KA payscales for new joiners. I believe this is simply the salary, and does not include housing allowances, pensions, and so on, which is what brings the "total remuneration" up to the levels consistent with the annual report.
