Only applies to US Citizens with foreign income

I'll be meeting with a tax specialist this week, with two different specialists to be exact, but I've been reading all day about the tax exemptions for US citizens working outside of the USA in order to be informed and be able to ask better questions.

I just read that as an employee working for a foreign company I wouldn't have to pay Social Security or Medicare on foreign earned income (unlike a self employed pilot who would have to pay the IRS Self-Employment Tax for SS and Medicare) but that brings up a doubt.

Does a pilot working in UAE get a W-2 at the end of the year given to him and sent to the IRS or is it up to the pilot to keep track of what he's been paid and inform the IRS?
