The only answer I can think of for these people is to buy your own aircraft if you wish to accept the risk of flying through ash clouds.
As it happens I am a shareholder in a large airline so do in fact part-own quite a few aircraft. I am quite content for the management and flight crew to make their own judgment, bearing in mind that the whole purpose of an airline is to make a profit.
