Lets get this straight. Humans cannot change their sex, only their appearance. A persons sex is determined at the point of conception and is irreversible. You can phaff about with hormones but the chromosomes are fixed.
There have been a very small cases of gender dysfunction, normally at puberty and beyond the control of those involved. Theirs is a medical dysfunction, not a lifestyle choice.
