Since you're only looking at averages, can't this information be gleamed from the titles passengers must supply with their booking, i.e. Mr/ Mrs/ Ms/Miss/Sir/Dame (I guess it falls down when you get to Captain or Rev).
along with the infant/child data that is surely entered during the booking process too (unless passengers now pay an adult fare for infants)?
Personally I prefer to use a check-in desk - I like th human contact
