So which are you trying to achieve? Or both?
On PPRuNe, the easiest way to do it is to copy the URL you want to put in the post, then just write the text you want to appear in the post instead of the URL, then
highlight that text, click the "Insert Link" icon, and paste the URL in the dialog box.
No idea about your email, although mentioning what email client you are using might help someone else give you some advice.
