Firstly I would say..think of other options before you consider this business...it is not the most stable and is probably the most unrecognised and unappreciated!
Most of us are real sick individuals who still get a kick out of aircraft and aviation and do it for the love of it....despite what other may say.
I am not sure if any apprenticeships are going on, but if not see if you can stretch to a course off your own back thru either of the schools in Perth or Oxford. Failing that try for the armed forces, RAF, Army or Navy (but the latter if you fancy going the rotary route)
