Can anyone tell me if i can log the time in the Sim
You only log flight time! Sim time may be logged by a student when it is part of an approved course. As an instructor its worth nothing!
JAR-FCL 1.080
(iii) The holder of an instructor
rating may log as pilot-in-command all
flight time during which he acts as an
instructor in an aeroplane.
You may be required by your employer to keep a record of Sim time as it affects your duty hours, rest periods and must not exceed an approved maximum.

Can i use those hours towards the CPL Instructors rating (min 200 duel given)
There is no such thing as a CPL Instructors rating! The 200 hour requirement is in JAR-FCL 1.330
(b) the issue of a CPL(A), provided that the
FI(A) has completed at least 500 hours of flight
time as a pilot of aeroplanes including at least
200 hours of flight instruction;
Thus of the 500 hours in aeroplanes 200 must be instruction also in aeroplanes.


All of this should be clearly stated in your FTO Operations Manual!
