'Air Traffic Control' by Graham Duke (published by Ian Allan) is good. Graham is, (I believe), a retired civil engineer and really knows his subject. I think the book is in its 8th or 9th edition.
If ATC is considered as a degree-level subject, Graham's book is a GCSE or even a basic 'A' Level textbook.
