Hi there, I flew couple months out of North perry, just in between fort lauderdale and miami.
Although DT1 helipad in Fort lauderdale is quite interesting for photos, I am not sure that the traffic will be very intense...
as you can see on the following link, there are quite a bunch of airfield around this area.
Fort lauderdale KFLL is mostly corporate flying with a helo school and police chopper, north Perry Khwo has quite a bunch of helos with the news chopper mostly nice 407, one 206 I think, and 2 training facilities with R22 and H300 and R44 for tours operating from miami bay (you should check this place as it is quite original with a barge with outboard engines on the water though). On the south ramp a Bell/eurocopter's repair station, if you get lucky you may see one flying in or out...

then opa locka kopf I do not remember about helos over there, but very often met the coast guard dolphins around it...
Miami is not the best bet for you to take pictures, but Tamiami KsTMB is sure a good one:
brand new police 350 B2, 206 and fire fighting 214. An EMS 135 and bunch of R22/R44 and 206 for training and other use.
I am sure forgetting a lot of other helos and place but it is a good start for you I think.
Also all the airports north of the area do have training school and EMS/private helos too.
Quite often I landed on a helipad right next to key marathon island airport about 2/3 hours driving from miami southbound on the road to Key West. It is pretty good to land over there to grab a lunch or so and also very scenic for photos.
Good luck in your task
Davy
