I'm no longer flying the Airbus 330/340 however the plane is easy to fly with the stab trim stuck as there are no control loads passed through the side stick. It's very much a non event when compared to the 747 which can have very high loads on the column with a stuck stab.
The QRH for the airbus does have a limitation if the stab is stuck above 8 degrees nose up, the speed is limited to 180kts so I assume you may run out of nose down elevator if you fly any faster and for the stab to be in such a high nose up trim I assume the A/C was flying slowly anyway when the stab stopped moving for whatever reason.
