If flying to keep a non-flyer happy, then I'd suggest that you plan a trip which involves using the aircraft to get somewhere. Abandon it for 3 nights, then fly to the next place and repeat.
Too much flying will put a non flyer off. They want to go places, rather than spending time in the air.
This also has the great advantage of not putting too much pressure on you weather wise. If the weather isn't great one day, then it's no big deal to leave a day later/earlier to work around the weather. Your time table has flexibility built in.
Obviously with minimum hours, it might mean that you're flying long distances each day to make up the min hours, but this should suit both of you
