FMC input vs ATC instructions

I couldnt find any suitable thread to post my questions, so i hope im not posting in the worong section.

1) For the 744 (or any wide-body), the flight plan is loaded into FMC while on the ground right? ie. all the waypoints, star, sid, etc. Upon takeoff, when the pilot engages the lnav and vnav, the 'autopilot' then controls the plane and traverses along the flight plan as specified in the FMC.

But what if the ATC instructs a different heading? eg, the FD flies heading of 250 but the ATC instructs to fly 270 (maybe for spacing)? Is the FD 'intelligent' enough to acknowledge the ATC's instructions and override the previous flight plan/route?

2) Why do pilots in airliners turn the yoke slightly to the left during the takeoff roll? I saw this in a number of videos and as a passenger (left ailerons slightly down)
