Try getting an A330 or A340 to climb at anything more than the curvature of the Earth ... at any weight
Seriously though, ATC do not expect instantaneous speed reductions and don't plan on them. Those lucky enough to have Mode S downlinked parameters can soon work out how quickly the IAS is changing
