Yes, you are right; any jet PIC time will work as long as your type rating is in a heavier aircraft. However, they tend to be absolutely inflexible about the 3000 hours, even being just 100 hours short means that you do not meet their requirements for captain. I was in a similar situation and ended up deciding to take the FO job, with the promise of upgrade opportunity in a few years. Still better than anything I could have gotten in the states.
