I've been asking and reading around to find that answer and as far as I can tell..no. Holds are only included as part of an approach procedure stored in the database. You can't edit them or create your own.

On the WAAS 430/530 they are a bit smarter and allow Autopilots to fly them while linked to GPS but thats as much as I could tell.
