If having an IFR rating is not a requirement for many companies, it will definitely help you to get in, as you can imagine. There are (not as much as in Maun, but still..) lots of folks looking for jobs...and they probably have an IFR rating...
so the best would be, I think, to do it in Australia, or wherever you want, then come down and make a validation of your foreign license.
I know some operators did hire some low hours, no IR, CPL pilots, but they were namibians (all of them If I do remeber right, but it was a while ago, so I might be wrong).
For your Cessna 200 serie stuff, it WILL definitely help...
