Hersham Boy, start with a quick look in your local yellow pages then telephone at least three companies. Decide who sounds the friendliest and DO ask if your money is refundable in the eveny of too many weather cancellations.
I can not agree with 'Who has control', a good pilot will give you a good landing, a bad pilot.....well??
Also go as well, it really IS great fun (by the way the ONLY way to fly a balloon is BELOW 500 feet
