The least you use the sidestick during engine out, the better, use as much rudder as you need to center the beta target or sideslip indicator and the most important item is to go to 12.5 degrees of pitch, if you do nothing else, the airplane will fly; wait at 12.5 until the srs (horizontal fd bar) reaches your pitch and then follow it. When you have CONTROL use the rudder trim to relieve the pressure on your leg and engage the auto pilot, you do not need to have a lot of trim or have full control to engage the A/P, just make sure you have the correct pitch so your speed won't be too low. AP will not engage below VLS (lowest selectable speed).

After 400 agl in the altimeter, not the radio altimeter(airport elevation +400) call for ECAM actions, at airport elevation +1400 push V/S to level off at airport elevation +1500, depending on take off flap at F speed ask to stop ECAM and ask for for flaps 1, at S speed ask for flaps 0, continue ECAM. Your tasks then are altitude pull to get open climb, thrust lever MCT (if it was a flex T/O bring the T/L to climb and then back to MCT, if it was TOGA just bring it back to MCT). During th climb to selected altitude on the FCU the target speed will be green dot (close to 200 KTS) but once you are in the altitude capture mode (ALT*) target speed will become 250 KTS, you have three choices, let it go to 250 KTS, activate app(on MCDU PERF page) or select any speed you want on the FCU.
