From the Cabin Crew perspective, we think in terms of "Aircraft Left" and "Aircraft Right", not whichever way we happen to be facing at the time

As for the suitability of the exit to be used, as has already been pointed out crew are trained to check the conditions outside the exit before opening it and sending pax down the slide. Admittedly the viewing windows provided on a lot of aircraft are useless to say the least - they often dont give any scope beyond the area directly in front of the door - so cabin windows are often used in making that assessment as well.
