They're not.
Your modern airliner has a lock on the cockpit door and an interphone for communications between cockpit and cabin. Big deal. Anyone can see (and hear) the hosties talking on the phone if they're standing around waiting to use the bog.
And anyone who tries to walk into the cockpit will discover the lock.
