I assume that only applications of pilots with a 757/767 typerating will be accepted. So if you have some experience on either one, the SIM should not be a problem.The SIMs used are for 757-200 with PW2040 and for 767-300 with PW4062.
I would expect some basic raw data flying, some approaches and maybe a couple of abnormals, but nothing really nasty. They will certainly look into your CRM skills. The check pilots are pretty straightforward and fair and do not intend to make you look like a fool. Basically be yourself, practice good airmanship and know the basics of your aircraft. A review of aircraft systems is never a bad idea.
On the interview and the psychometric tests, I do not know, but I assume that just being yourself and not pushing it too hard would be the best.
