savannahTT: I had the same problem with one of my ex employers. The easiest way, and the one the recruitment dept. willl most likely go with, is for you to provide a 'Gap Reference'. This can be someone that has known you for at least 5 years, (including the period you were working at the resteraunt) and is prepared to say that you, to their knoledge worked their. You will also have had to send off a request to the Inland Revenue to confirm your employments, this letter will show that you were actuely working for that company, as opposed to being locked up somewhere!!
