Because if the water from the tap is of non-potable quality you may poison them. I guess if you or your company cared about their pax - or cockpit crew - you might find that somewhat worrying

If you don't want to pay for bottled water then fly with an airline that provides it free of charge or, as nothing is free, included in the ticket price
