I'm surprised that the Pilot Training College down in Waterford has not been mentioned yet. They offer an integrated training course and are the only FTO in Europe that I know of that actually include a trial flight as part of the assessment. The flight is brilliant fun and is very useful for those that have not experienced flying in a small plane before to get a feel for what it is like.
