Fabric, please.
You slide about much more on leather. That makes it very difficult to sleep, because you need more things with which to prop yourself into a stable position. And I'm in a premium economy seat on longhaul primarily because I want a better sleeping environment.

Again, assuming you're talking about longhaul, I would take the comfortable seat over the onboard service
if I absolutely had to choose between them.
But IME the two often go hand in hand. And decision making is never so clear cut - there's swings and roundabouts all over.
