There is no such thing as an 'aviation related high school' in UK. I'm not aware of any in the USA, though there are a number of 'aviation universities' (such as Embry-Riddle) over there.
I have no idea what facilities are available to you in Italy, but if you are moving to the UK you should consider joining the Air Training Corps to help you learn about aviation.
