To be fair, Hermes was operating at over capacity in the Falklands campaign. Her 1966 capability was:

12 X Sea Vixen
6 X Buccaneer
3 X Gannet AEW
Up to 6 X Helo

In the Falklands she had

12 X Sea Harrier
9 X Pingers
9 X Junglies

Eventually she has a total of 18 Shar/GR3s embarked in addition to helos. Not bad for a 27,000 ton CV.
