What is it you want them to tell you ?

That on rare occaisions flights have to be cancelled because of adverse weather.

That such weather disruption causes a great deal of inconvenience and cost to companies and their customers.

If they have offered to refund your fare because they cannot complete the contract of carriage due to circumstances beyond their control, or they offered to complete the contract of carriage as soon as it is safe to do so, then there is not much else they can do.

You entered into a contract with them and at some point agreed to be bound by the terms within. The EU rules for compensation can be found Here. Good luck.
