Just checked in the Dubai Zappy which is a useful book available in Dubai which tells you all about these sorts of things!
Yes Poland is one of those 'Exchangeable Foreign Driving Licences' so all you need to do when you arrive is take your orginal driving licence and the usual paperwork requirments to the Traffic Police Office and they will give you 10 yr drviing licence for a small fee. Recently I've heard that a new requirement is once again an eye test which you have done at any optician here in Dxb. Good Luck and dont worry.
