Post SEP revalidation

My SEP Land class rating is due to expire. However, I'm a little tied up right now and wont be able to do the required 1 hour flight with an instructor (I have already done 30 P1 hours this year) in time. Note, I am not talking about the license renewal just the SEP Land class rating.

My question: If my SEP Land class rating is due to expire on the 12th and I've not done the required 1 hour with an instructor (I cannot obviously expect my rating to be renewed and signed off based on 'experience'). If I wait until the 20th, then do the required 1 hour with an instructor, can my rating be renewed and license signed of by a CFI, even though 8 days have elapsed since the rating expired?
