Saturn I've only flown in and out of Beijing and Shanghai. These are the two major ports of entry for foreign airlines and are set up quite well. ATC English can be a bit of a problem at times. You definately need to use standard ICAO phrases and listen carefully, especially on route as they will not understand you. Note that Flight levels are metric.
The locals are friendly but there is a lot of red tape still. The two places I mentioned are great with plenty to see and do, day or night! I am sure you will have a great time if you "bend" with the local ways a little and keep a low profile.
