Here is a sample of what one company uses for it's weight and balance.

Weight Values for Passengers and Cabin Baggage (JAR-OPS1.615 and 1.620)

Adult: male and female, are defined as persons of an age of 12 years and above.

Child: are defined as persons of an age of two years and above but who are less than 12 years of age.

Infant: are defined as persons who are less than 2 years of age.
Non-holiday flights / Holiday flights

Male: 88 kgs. / 83 kgs.
Female: 70 kgs. / 69 kgs.
Child: 35 kgs. / 35 kgs.
All Adults – no children: 84 kgs. / 76 kgs.

Baggage:

Domestic flight means a flight with origin and destination within the borders of one State;

Flights within the European region means flights, other than Domestic flights, whose origin and destination are within Europe.

Intercontinental flight, other than flights within the European region, means a flight with origin and destination in different continents.

Domestic: 11 kgs.
Intercontinental: 15 kgs.
Others: 13 kgs.
