And if those self-employed contracts that the individual(s) have provided to the police as evidence should dare to refer to such things as days off and holiday entitlement then the individual(s) could seriously be in the dunny.

Only employed individuals have an entitlement to days off and holiday, self-employed individuals might need to refer to the same as days free of duty or unrostered days.

The joys of an 'offshore' contract, reap the fiddles for as long as one can but involve the authorities when it all goes horribly wrong, well one might foresee the taxman coming knocking and indeed a lawyer, if one has employed a lawyer, warning of the same.
