Audacity

For recording to disk I recommend Audacity. It's free, universally acknowledged and brilliant. You can save/edit as wav or MP3.

Basically it will record whatever you can hear on your soundcard....

Installation and use is straightforward for Windows or Linux PC's... but do follow the instructions as there is a second file to load in the installation directory (for licensing reasons) to enable MP3.
