Poor Binos
There is no 'undo' for this feature unfortunately. Hindsight being the great thing that it is, only making a backup of your Music Library prior to pressing the button would have enabled you to restore the previous state.
The only thing that might save you is if you've not yet synced to your iPod from the new 'organised' library. Using a utility such as
iPod.iTunes should allow you to rebuild your iTunes library from the iPod. Not sure if this is what you wanted to hear, but hope it helps.

thread on an Oz-based site that is discussing the very same issue. Consensus seems to be that the organise function grows on you once you've got used to it..
