So could this have been carb-related ? What angle would you have to bank to to cause problems with a standard carb ?

Any angle of bank where the 'g' is still positive should not affect the carb. Only negative 'g' will cause it to malfunction. Since steep turns simply increase the 'g', they should not affect carb operation.
