Try seeing if your local library has a copy of Donald McLean's "Automatic Flight Control Systems", it might help - there are sets of stability derivatives in there for a number of sample aeroplanes, and a lot of worked examples.
Do check the calcs in the book though, there are a few errors I'm afraid.
